These extreme weather conditions severely tested the vines, forcing them to seek a challenging biological balance between phenolic concentration and natural freshness. Only the providential rains of late August allowed the vineyards to breathe again, guiding the grapes to ideal ripeness. For the Cellar Master Caroline Latrive and his cellar team, the real challenge lay not in the pursuit of extractive power, but in skillfully translating that richness into finesse and balance. For this reason, the Chardonnay harvest was deliberately postponed, waiting for the moment when the acidity and aromatic profile reached absolute harmony. The blend of the seven Crus: the symphony of Chardonnay

Each individual parcel is vinified separately in stainless steel to preserve the fruit's original aromatic integrity. Only after a rigorous tasting process, after more than twenty blending trials, is the final cuvée bottled and then descended into the silence of the Maison's historic underground cellars in Aÿ. Here, thirty meters underground, Amour de Deutz has rested undisturbed for almost ten years, slowly maturing on its own lees.

In the glass, the 2015 Amour de Deutz immediately reveals the extraordinary brilliance of its vintage, bathing in a golden color with brilliant highlights and enlivened by an extremely fine and commendably persistent perlage. On the palate, the entry is precise, deep, and sharp. Born in Reims, raised surrounded by the aroma of musts and her father's analysis laboratories, Caroline brings with her an immense cultural background, enriched by experience gained at major brands such as Bollinger and Ayala. Hand-picked by her predecessor Michel Davesne to ensure the winery's stylistic continuity, Caroline has successfully established a philosophy based on absolute respect for the raw materials.

Her approach isn't aimed at leaving an authoritative mark on the wine, but rather at quietly interpreting the vintage-terroir relationship. And it's precisely through this sensitivity, combined with cutting-edge analytical rigor (evidenced by the creation of an in-house analysis laboratory for grape selection), that the 2015 Amour de Deutz expresses a subtle, vibrant elegance devoid of any ostentation.
