The production process: between cereal tradition and the selection of botti

The taste structure of Buffalo Trace comes from a careful selection of zero-mile cereals: corn, rye and malted barley. Unlike a homogeneous industrial process, the distillery adopts different times and methods for each ingredient:

  • The Corn: It is pressure cooked to release all the complex sugars from the grain.
  • Rye and Barley: they undergo more delicate cooking, without added pressure, preserving the fragrance and primary aromas.

Fermentation takes place in imposing 350,000-liter vats with selected yeasts. Distillation follows a double step: an initial phase inside tall continuous columns, followed by refinement in pot still.

Aging in the Frankfort Warehouses

Once distilled the New Make, the liquid enters newly built American white oak barrels, whose wood is seasoned in the open air for at least 6 months before cooperage and final carbonization.

The real added value of Buffalo Trace lies in the management of warehouse. The team of master distillers selects for this flagship bottling mainly the barrels stored in the central floors of the stacks. In these intermediate levels, the continental temperature range acts with extraordinary harmony, allowing the wood to release tannins and vanillin without overpowering the typical sweetness of the mashbill.

  • Visual examination: It appears in the glass with a deep, liquid and brilliant amber colour, with golden copper reflections.
  • Olfactory examination: The nose is welcoming and rich. Sweet notes of caramel, bourbon vanilla, and custard dominate, balanced by woody notes of toasted oak, sweet spices, and a slightly balsamic nuance.
  • Taste test: On the palate, it's smooth, rounded, and balanced. The sweetness of corn and caramel blends with hints of citrus zest, light toasted cereals, and cinnamon. The 40% structure makes it extremely drinkable, yet not lacking in persistence.
  • Final: medium length, clean, with hints of sweet oak, vanilla and spice.

Versatility is one of Buffalo Trace's great strengths. It can be enjoyed in a variety of ways:

  1. Smooth or On the Rocks: Served in a low tumbler glass, possibly with a single full ice cube, it is the classic everyday drama from informal meditation.
