Born in 2014 from an intuition of Edward Strange, Amara has redefined the concept of citrus bitters in Italy, elevating the Sicilian PGI Red Orange to the pinnacle of signature liqueurs.
The origins: from the family's citrus groves on the slopes of Etna
Amara's story has its roots in Contrada San Martino, in Misterbianco, a fertile corner at the foot of the volcano. Here, on the eighty hectares of land inherited from his grandfather, Edoardo Strano has chosen to embrace a decades-long agricultural legacy and transform it into a contemporary challenge: enhancing the extraordinary local raw materials through rigorously artisanal processing.
Etna's microclimate plays a fundamental role. The sharp temperature variations between day and night favor the synthesis of anthocyanins and an extraordinary accumulation of polyphenols in the citrus peels, giving the oranges their unmistakable ruby red hue and unparalleled aromatic richness.

The production process: the multiple infusion technique
What distinguishes Amaro Amara in the panorama of spirits artisanal is the absolute respect for the rhythms of nature and the quality of the workmanship:
- Recognition and selection: Sicilian PGI blood oranges are grown without the use of chemicals and hand-picked at the perfect stage of ripeness;
- Manual peeling: each individual fruit is peeled by hand with a single, precise cut to separate the peel without damaging the bitter pith underneath;
- Multiple Infusion: the peels are immersed in pure citrus alcohol using the infusion technique repeated seven times to constantly renew the aromatic charges;
- Volcanic herbs and spring water: the citrus infusion is combined with aromatic and wild botanical herbs collected on Etna, bathed in the pure water of the volcanic springs;
- Rest in lava stone: The liqueur ages for approximately six months in the cellars of the family farmhouse, where the lava stone maintains a natural and ideal temperature and humidity.
The finishing touch is purely sartorial: each bottle is hand-sealed with red sealing wax, a detail that underscores the visceral connection with the orange juice and the lava of Etna.

The sensory profile: a sip of volcanic Sicily
It is crystalline to the eye, with a splendid golden yellow hue enhanced by crisp copper highlights. On the nose, it is enveloping and elegant: the freshness of orange peel and orange blossom immediately intertwines with hints of Mediterranean scrub, broom, and delicate balsamic nuances. On the palate, it is soft and rounded, with a pronounced citrus note paving the way for a complex, savory, and balanced bitterness. The finish, remarkably persistent, cleanses the palate, leaving a fresh memory of wild Etna herbs and freshly picked citrus fruits.

How to serve and pair Amaro Amara
- Smooth or iced: It is the ideal digestive served at a temperature between 0°C and 4°C, perfect for closing important lunches or dinners thanks to its degreasing and refreshing properties;
- In mixology: Amara has become a major player in cutting-edge cocktail bars. It perfectly replaces classic vermouth or triple sec to give a distinctly Mediterranean character to a cocktail. Sicilian Negroni or a Twist on the Paper Plane.
- Format pairing and slow smoking: It pairs wonderfully with Modica dark chocolate with a high cocoa content. For those who enjoy a slow smoke, its citrus and balsamic freshness pairs beautifully with a half-cigar with a vegetal and woody aromatic profile, balancing the palate without overpowering the smoke.
